Just create a new character and pick Death Knight as the class. It will automatically start at level 55.

You don't change your hunter you just create a new character and it'll give you the choice to become a death knight (Only on the level 70's realm though). So it's pretty much just enter character creation screen on the server your 70 is on xD

You don't SWITCH it to a death knight, you go to create a new character, then select death knight. Every 'DK' starts out at 55, you don't have to sacrifice a character you have already leveled for one.
